Dill Pickle Popcorn Chicken

This chicken tastes just like Chick-fil-a nuggets. Crispy on the outside and juicy on the inside. They're low in carbs and calories and so delicious.

Ingredients
  

  • 2 lbs boneless skinless chicken tenders
  • 2 cups pickle juice
  • 1 egg
  • 1 cup pork rind crumbs
  • 1 Tbsp ranch seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method
 

  1. Place the chicken and pickle juice into a ziplock bag and marinate in the refrigerator for a few hours.
  2. Drain the marinade out of the bag. Take the chicken out, cut them into bite sized chunks and then place them back into the empty bag.
  3. Crack the egg into the bag of chicken and mix it around, making sure to coat all of the chicken chunks with it.
  4. In a separate bag, add in the crushed pork rinds, salt, pepper, garlic powder and ranch seasoning.
  5. Using a slotted spoon, transfer the chicken to the bag with the seasonings. Close the bag and give it a good shake to coat all of the chicken.
  6. Place the chicken on a greased oven crisp baking tray or a greased air fry basket.
  7. Bake at 400° for 20 minutes or air fry at 400° for 10 minutes or until chicken has reached an internal temperature of 165°.
