Low Carb/Low Calorie Chili

Low in carbs & calories but not low in flavor! My husband loves beans in his chili. I do not. When I make this, I prepare it as directed. I then scoop out a portion for myself and then add in beans and corn for my family. We all love it.

Ingredients
  

  • 1 lb ground beef
  • 1/2 yellow onion chopped
  • 1 Tbsp avocado oil
  • 2 Tbsp Kristy's Homemade Chili Seasoning
  • 15 oz petite diced tomatoes
  • 8 oz tomato sauce
  • 1 bell pepper diced
  • 1/4 cup water *optional: omit if you want a thicker chili
  • 1 tsp minced garlic
  • 1 tsp unsweetened cocoa powder
  • 1/2 tsp curry powder

Method
 

  1. In a Dutch oven or pot over medium heat, sauté the onions and garlic in avocado oil for 2-3 minutes.
  2. Add in the ground beef and scramble until cooked through. Drain excess grease.
  3. Stir in the chili seasoning, curry powder, cocoa powder, tomatoes and tomato sauce.
  4. Simmer over medium heat for 10 minutes.
