Low Carb Reubens

My low carb take on Reubens is a crowd pleaser! With over 19 million views and rave reviews, this is a must try.

Ingredients
  

  • 3 Cutdacarb Flatbreads *You could make this on any flatbread, tortilla or even rye bread
  • 12 slices Swiss cheese
  • 1 lb deli corned beef chipped
  • 1 cup sauerkraut drained
  • 6 Tbsp Kristy's Thousand Island Dressing
  • 1 Tbsp avocado oil

Method
 

  1. Working with just 1 flatbread at a time, lay it horizontally on your work surface.
  2. On the long side closest to you, add on 3 slices of Swiss cheese, side by side.
  3. Add 1/3 cup of drained sauerkraut on top of the cheese followed by 2 Tbsp of Thousand Island dressing.
  4. Next add on 1/3 of the corned beef.
  5. Roll it up tightly and cut it in half.
  6. Repeat two more times with the remaining ingredients.
  7. Heat a skillet over medium heat and add in the avocado oil.
  8. Sear the Reubens on all sides until golden brown.
