Burrito Pie

Burrito Pie – layers of beef, cheese, egg and tortillas. Low in carbs, full of flavor!

Ingredients
  

  • 1 lb 93% lean ground beef
  • 3 low carb tortillas *I prefer Hero tortillas
  • 2 eggs
  • 1 1/2 cups freshly shredded colby jack cheese
  • 1/2 cup 2% cottage cheese
  • 1/2 cup Kristy's Homemade Salsa
  • 1/4 cup fat free refried beans
  • 1/4 cup water
  • 2 Tbsp Kristy's Homemade Taco Seasoning
  • 1 Tbsp tomato paste

Method
 

  1. Preheat oven to 375 degrees F.
  2. In a skillet over medium heat, scramble the ground beef until it is cooked through.
    1 lb 93% lean ground beef
  3. Stir in the taco seasoning, water, tomato paste and refried beans.
    1/4 cup water, 2 Tbsp Kristy's Homemade Taco Seasoning, 1 Tbsp tomato paste, 1/4 cup fat free refried beans
  4. Once combined, remove from the heat and stir in the cottage cheese, eggs and salsa.
    2 eggs, 1/2 cup 2% cottage cheese, 1/2 cup Kristy's Homemade Salsa
  5. Place 1 tortilla in a greased pie pan and top it with 1/3 of the meat mixture.
    3 low carb tortillas
  6. Sprinkle on 3/4 cup of cheese and then place the second tortilla on top.
    1 1/2 cups freshly shredded colby jack cheese
  7. Spread on 1/3 of the meat mixture and then place the last tortilla on top.
  8. Spread on the last of the meat mixture and top it with the remaining cheese.
  9. Bake for 28-30 minutes.
