Beef Taco & Rice

This meal comes together in under 20 minutes and is absolutely delicious! My kids and husband love it. I normally make this with cooked, shredded chicken but switched things up this time to beef. My family liked it even more!
Servings: 7.5 cups

Ingredients
  

  • 1 lb lean ground beef 93% or 96%
  • 2 Tbsp Kristy's Homemade Taco Seasoning
  • 15 oz corn drained
  • 13 oz beef broth low sodium
  • 8 oz tomato sauce
  • 1 1/2 cups white minute rice uncooked
  • 4 oz colby jack cheese shredded

Method
 

  1. In a skillet over medium heat, scramble the beef until cooked through. Drain excess grease if needed.
  2. Add in the taco seasoning, beef broth, tomato sauce and corn. Bring to a boil.
  3. Stir in the rice, cover with a lid and turn heat to low.
  4. Cook for 5 minutes and then fluff with a fork.
  5. Top with cheese, cover with a lid and cook for another few minutes or until the cheese has melted.

Notes

I serve this meal with a side of tortilla chips. We all like to dip our chips in it. My husband and youngest daughter like to drizzle on some Frank's Red Hot as well.
