Ingredients

  • 1 lb ground beef
  • 2 Tbsp Kristy's Homemade Taco Seasoning
  • 1 cup water
  • 1 Tbsp tomato paste
  • 12 tortillas *I use Hero Bread Tortillas
  • 1 1/2 cups pico de gallo
  • 1 1/2 cups cheddar cheese
  • 1 1/2 cups Monterey Jack cheese

Instructions

  • Scramble the ground beef in a skillet over medium heat until cooked through and no longer pink. Drain the excess grease.
  • Stir in the water, taco seasoning and tomato paste. Cook over medium heat until the water has reduced and the meat mixture has thickened.
  • Shred the two cheeses and then mix them together.
  • Dampen a large paper towel and wrap a tortilla with it. Microwave it for 15 seconds.
  • Add 1/4 cup of taco meat, 2 Tbsp of pico de gallo and 1/4 cup of cheese to the warmed tortilla and then roll it up like a burrito.
  • Wrap it in the damp paper towel again and microwave for another 15-20 seconds.
  • Repeat with the remaining tortillas.
