Ingredients
- 1 lb ground beef
- 2 Tbsp Kristy’s Homemade Taco Seasoning
- 1 cup water
- 1 Tbsp tomato paste
- 12 tortillas (I use Hero Bread Tortillas to keep it low carb)
- 1 & 1/2 cups pico de gallo
- 1 & 1/2 cups shredded cheddar cheese
- 1 & 1/2 cups shredded Monterey Jack cheese

Directions:
- Scramble the ground beef in a skillet over medium heat until cooked through and no longer pink. Drain the excess grease.

2. Stir in the water, taco seasoning and tomato paste. Cook over medium heat until the water has reduced and the meat mixture has thickened.

3. Shred the two cheeses and then mix them together.


4. Dampen a large paper towel and wrap a tortilla with it. Microwave it for 15 seconds.

5. Add 1/4 cup of the taco meat, 2 Tbsp of pico de gallo and 1/4 cup of cheese to the warmed tortilla and then roll it up like a burrito.



6. Wrap it in the damp paper towel again and microwave for another 15-20 seconds. Repeat with the remaining tortillas.

Copycat Taco Bell Meximelt
Ingredients
