Add the chicken chunks, soy sauce, minced garlic, pepper and monkfruit sweetener into a bowl or ziplock bag. Marinate in the fridge for at least 30 minutes.
1.5 lbs boneless, skinless chicken breasts, 1/4 cup gluten free soy sauce, 2 Tbsp golden monkfruit sweetener, 1 Tbsp minced garlic, dash of pepper
When you are ready to begin cooking, heat a griddle, wok or skillet over medium heat and add in the avocado oil.

Begin cooking the chicken on one side of the griddle or in a wok/skillet.

Add the veggies to the other side of the griddle or in a different skillet. Squirt some water on them and cover with a cooking dome or a lid to help them steam quickly.
Once the chicken is just about cooked through and the veggies are tender, begin scrambling the eggs into the skillet.

Combine the chicken, veggies and eggs together and pour on the sauce packets. Stir to combine. *Reserve a small amount of sauce for the rice.
Lastly, add the rice onto the griddle or into the skillet and pour on the remaining sauce and a drizzle of sesame oil. Stir to coat the rice with the sauce and then enjoy!
