Chicken Stir Fry

This is an easy meal that comes together in under 20 minutes. It's one of my family's favorites!

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts cut into chunks
  • 1/4 cup gluten free soy sauce
  • 2 Tbsp golden monkfruit sweetener
  • 1 Tbsp minced garlic
  • dash of pepper
  • 2 bags Taylor Farms Sauté Stir Fry Mix
  • sticky rice precooked
  • 1 Tbsp avocado oil
  • sesame oil
  • 4 eggs

Instructions

  • Add the chicken chunks, soy sauce, minced garlic, pepper and monkfruit sweetener into a bowl or ziplock bag. Marinate in the fridge for at least 30 minutes.
    1.5 lbs boneless, skinless chicken breasts, 1/4 cup gluten free soy sauce, 2 Tbsp golden monkfruit sweetener, 1 Tbsp minced garlic, dash of pepper
  • When you are ready to begin cooking, heat a griddle, wok or skillet over medium heat and add in the avocado oil.
    1 Tbsp avocado oil
  • Begin cooking the chicken on one side of the griddle or in a wok/skillet.
    2 bags Taylor Farms Sauté Stir Fry Mix
  • Add the veggies to the other side of the griddle or in a different skillet. Squirt some water on them and cover with a cooking dome or a lid to help them steam quickly.
  • Once the chicken is just about cooked through and the veggies are tender, begin scrambling the eggs into the skillet.

  • Combine the chicken, veggies and eggs together and pour on the sauce packets. Stir to combine. *Reserve a small amount of sauce for the rice.
  • Lastly, add the rice onto the griddle or into the skillet and pour on the remaining sauce and a drizzle of sesame oil. Stir to coat the rice with the sauce and then enjoy!
