Easy Personal Quiche

These personal quiches are low in carbs and high in protein. Make them your own by adding whatever meats or veggies you'd like.

Ingredients
  

  • 1 low carb tortilla *I like Hero Tortillas
  • 1.25 oz Gilbert's chicken sausage sliced
  • 1/4 cup shredded colby jack cheese
  • 3 Tbsp liquid egg whites
  • 2 Tbsp 2% cottage cheese
  • 1 large egg
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat oven to 375 F.
  2. Grease a 7" round aluminum pan with avocado oil spray.

  3. Place the tortilla in the pan and press down in the center.

  4. Crack the egg into the tortilla and then add in the egg whites, cottage cheese, salt and pepper. Stir to combine.
    3 Tbsp liquid egg whites, 2 Tbsp 2% cottage cheese, 1 large egg, salt to taste, pepper to taste
  5. Sprinkle on the shredded cheese and then add on the sliced sausage or whatever toppings you'd like.

  6. Bake for 15-20 minutes or until the center is no longer jiggly.
  7. Let cool for a couple of minutes before cutting into fourths. Enjoy!
