Easy Personal Quiche

These personal quiches are low in carbs and high in protein. Make them your own by adding whatever meats or veggies you'd like.

Ingredients

  • 1 low carb tortilla *I like Hero Tortillas
  • 1.25 oz Gilbert's chicken sausage sliced
  • 1/4 cup shredded colby jack cheese
  • 3 Tbsp liquid egg whites
  • 2 Tbsp 2% cottage cheese
  • 1 large egg
  • salt to taste
  • pepper to taste

Instructions

  • Preheat oven to 375 F.
  • Grease a 7" round aluminum pan with avocado oil spray.

  • Place the tortilla in the pan and press down in the center.

  • Crack the egg into the tortilla and then add in the egg whites, cottage cheese, salt and pepper. Stir to combine.
    3 Tbsp liquid egg whites, 2 Tbsp 2% cottage cheese, 1 large egg, salt to taste, pepper to taste
  • Sprinkle on the shredded cheese and then add on the sliced sausage or whatever toppings you'd like.
    1/4 cup shredded colby jack cheese, 1.25 oz Gilbert's chicken sausage
  • Bake for 15-20 minutes or until the center is no longer jiggly.
  • Let cool for a couple of minutes before cutting into fourths. Enjoy!
