
Easy Personal Quiche
These personal quiches are low in carbs and high in protein. Make them your own by adding whatever meats or veggies you'd like.

Ingredients
- 1 low carb tortilla *I like Hero Tortillas
- 1.25 oz Gilbert's chicken sausage sliced
- 1/4 cup shredded colby jack cheese
- 3 Tbsp liquid egg whites
- 2 Tbsp 2% cottage cheese
- 1 large egg
- salt to taste
- pepper to taste
- avocado oil spray
Instructions
- Preheat oven to 375 F.
- Grease a 7" round aluminum pan with avocado oil spray.avocado oil spray
- Place the tortilla in the pan and press down in the center.1 low carb tortilla
- Crack the egg into the tortilla and then add in the egg whites, cottage cheese, salt and pepper. Stir to combine.3 Tbsp liquid egg whites, 2 Tbsp 2% cottage cheese, 1 large egg, salt to taste, pepper to taste
- Sprinkle on the shredded cheese and then add on the sliced sausage or whatever toppings you'd like.1/4 cup shredded colby jack cheese, 1.25 oz Gilbert's chicken sausage
- Bake for 15-20 minutes or until the center is no longer jiggly.
- Let cool for a couple of minutes before cutting into fourths. Enjoy!
