Preheat oven to 350 degrees.
In a mixing bowl, beat the softened cream cheese and 1/4 cup of powdered monkfruit sweetener until combined.
Slowly beat in the egg and vanilla until smooth and then stir in the lemon juice.
In a medium bowl, use a fork to mix the melted butter, golden monkfruit sweetener, almond flour and cinnamon until crumbly.
Add the raspberries and water to a small saucepan. Cook over medium-low heat while mashing the berries. Add in 1.5 Tbsp of powdered monkfruit sweetener and stir until smooth.
Remove the berries from the heat and let them cool.
Butter a silicone muffin pan. Fill each muffin cup with about 1 Tbsp of the crumb mixture and pack it down with the backside of a spoon.
Next, add a spoonful of the cheesecake filling to each one
Finally, add about 2 tsp of the raspberry drizzle to each one and swirl it around.
Bake for 15 minutes and then let them cool in the fridge completely before removing from the pan.
