Smothered Chicken is a delicious recipe that can be made in a pinch. The perfectly marinated chicken breasts are cooked to perfection and then smothered in crispy bacon, mushrooms and gooey cheese.

Ingredients

  • 6 thinly sliced boneless, skinless chicken breasts
  • 5 slices of colby jack or colby swiss cheese
  • 4 slices bacon
  • 1 pint sliced mushrooms
  • 1 lemon
  • 2 Tbsp dijon mustard
  • 1 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper

Instructions

  • Start out by adding the chicken breasts, juice of 1 lemon, dijon mustard and seasonings into a gallon ziplock bag or a covered bowl. Let it marinate for at least 30 minutes.
    6 thinly sliced boneless, skinless chicken breasts, 1 lemon, 2 Tbsp dijon mustard, 1 tsp salt, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp black pepper
  • Heat a griddle or skillet over medium heat and spread on a thin layer of avocado oil.
    1 Tbsp avocado oil
  • Begin cooking the chicken and then on the other side of the griddle (or in a separate skillet) begin cooking the mushrooms and the bacon.
    1 pint sliced mushrooms, 4 slices bacon
  • Flip the chicken over after a few minutes.
  • Once the chicken is just about cooked through, push the breasts close together and then top them with the bacon, mushrooms and cheese. Cover with a dome lid for 1-2 minutes.
    5 slices of colby jack or colby swiss cheese
  • Remove the lid, make sure the chicken has reached an internal temperature of 165 F and then enjoy!
