Smothered Chicken is a delicious recipe that can be made in a pinch. The perfectly marinated chicken breasts are cooked to perfection and then smothered in crispy bacon, mushrooms and gooey cheese.

What Should I Serve With Smothered Chicken?

Any roasted or steamed vegetable will work as a side. We usually pair this meal with roasted zucchini. Sometimes I will make rice pilaf as a side dish. Potatoes would be good as well. Ingredients:

Marinade:

  • the juice of 1 lemon
  • 2 Tbsp dijon mustard
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper

Smothered Chicken:

  • 6 thinly sliced boneless skinless chicken breasts
  • 5 slices of colby swiss or colby jack cheese
  • 3 slices of bacon
  • 1 pint of sliced mushrooms

How To Make Smothered Chicken:

  1. Start out by adding the chicken breasts and marinade ingredients into a gallon ziplock bag or a covered bowl. Let it marinate for at least 30 minutes.
  2. Heat a griddle or skillet over medium heat and spread on a thin layer of avocado oil.
  3. Begin cooking the chicken and then on the other side of the griddle (or in a separate skillet) begin cooking the mushrooms in butter and the bacon.

4. Flip the chicken over after a few minutes.

5. Once the chicken is just about cooked through, push the breasts close together and then top them with the bacon, mushrooms and cheese. Cover with a dome lid for 1-2 minutes. See photo slideshow below.

  • Heat a griddle or skillet over medium heat and spread on a thin layer of avocado oil.

  • Begin cooking the chicken and then on the other side of the griddle (or in a separate skillet) begin cooking the mushrooms and the bacon.
    1 pint sliced mushrooms, 4 slices bacon
  • Flip the chicken over after a few minutes.
  • Once the chicken is just about cooked through, push the breasts close together and then top them with the bacon, mushrooms and cheese. Cover with a dome lid for 1-2 minutes.
    5 slices of colby jack or colby swiss cheese
  • Remove the lid, make sure the chicken has reached an internal temperature of 165 F and then enjoy!
