White Chocolate Peanut Butter Robins Eggs

This delicious low carb/low sugar treat is perfect for Easter! Peanut Butter filling meets white chocolate - the perfect pair!

  1. In a bowl, mix together all of the ingredients except for the chocolate, cocoa powder, water and coconut oil.
    3/4 cup Kristy's Homemade Peanut Butter, 1/4 cup almond flour, 2 Tbsp powdered monkfuit sweetener, 2 Tbsp zero sugar honey substitute, 1/2 tsp vanilla extract, pinch of salt
  2. Once the mixture is combined and thick, form into 10 even balls. Freeze until solid.
  3. Add the chocolate and coconut oil into a microwave safe bowl and microwave in 30 second intervals at 50% power until melted. Stir in food coloring if you desire your "eggs" to be colored.
    80 grams choczero white chocolate, 1 tsp coconut oil, a couple drops of blue and green food coloring
  4. Dip the balls (eggs) into the melted chocolate and then set them on a piece of parchment paper.
  5. In a small bowl, combine the cocoa power and water. Stir until dissolved.
    1/2 tsp Hershey's unsweetened cocoa powder, 1/4 tsp water
  6. Using a pastry brush, dip it into the cocoa powder mixture and then splash it onto the eggs to create a speckled design.
  7. Place in the fridge or freezer until hardened.
