Hot Honey & Ricotta Deep Dish Sourdough Discard Pizza

My family's favorite pizza! Deep dish sourdough pizza made in a cast iron skillet with fresh basil, ricotta and a drizzle of hot honey. It's a party in your mouth!
Servings: 8 slices

Ingredients
  

  • 3/4 cup warm water 110 F
  • 7.7 grams instant yeast *1 packet
  • 2 3/4 cup bread flour
  • 1 cup sourdough discard
  • 2 Tbsp olive oil
  • 2 tsp sugar
  • 1 tsp salt
  • 2 Tbsp fresh basil chopped
  • pepperoni
  • Italian sausage crumbles partially cooked
  • ricotta cheese
  • pizza sauce
  • mozzarella cheese freshly shredded
  • fresh mozzarella cheese slices or pearls

Method
 

  1. Add the warm water & yeast into a large mixing bowl. Let it sit for a few minutes and then add in the salt, sugar, discard and oil.
  2. Turn the mixer on low and then slowly add in the bread flour, one cup at a time.
  3. Once the dough has formed, knead for 10 minutes. Cover the bowl and place somewhere warm to rise for at least 30 minutes or until it has doubled in size.
  4. While it is rising, place the cast iron skillet in the oven and preheat to 500 F.
  5. Once the dough has risen, use your hands to pull and stretch it into a large circle. Place the crust on a piece of parchment paper and place inside of the hot skillet.
  6. Par bake for 3 minutes.
  7. Remove from oven and add on the sauce, mozzarella cheeses, dallops of ricotta, pepperoni and sausage.
  8. Bake for 15 minutes.
  9. Top with fresh basil and a drizzle of hot honey.
