Hot Honey & Ricotta Deep Dish Sourdough Discard Pizza

My family's favorite pizza! Deep dish sourdough pizza made in a cast iron skillet with fresh basil, ricotta and a drizzle of hot honey. It's a party in your mouth!

Ingredients

  • 3/4 cup warm water 110 F
  • 7.7 grams instant yeast *1 packet
  • 2 3/4 cup bread flour
  • 1 cup sourdough discard
  • 2 Tbsp olive oil
  • 2 tsp sugar
  • 1 tsp salt
  • 2 Tbsp fresh basil chopped
  • pepperoni
  • Italian sausage crumbles partially cooked
  • ricotta cheese
  • pizza sauce
  • mozzarella cheese freshly shredded
  • fresh mozzarella cheese slices or pearls

Instructions

  • Add the warm water & yeast into a large mixing bowl. Let it sit for a few minutes and then add in the salt, sugar, discard and oil.
  • Turn the mixer on low and then slowly add in the bread flour, one cup at a time.
  • Once the dough has formed, knead for 10 minutes. Cover the bowl and place somewhere warm to rise for at least 30 minutes or until it has doubled in size.
  • While it is rising, place the cast iron skillet in the oven and preheat to 500 F.
  • Once the dough has risen, use your hands to pull and stretch it into a large circle. Place the crust on a piece of parchment paper and place inside of the hot skillet.
  • Par bake for 3 minutes.
  • Remove from oven and add on the sauce, mozzarella cheeses, dallops of ricotta, pepperoni and sausage.
  • Bake for 15 minutes.
  • Top with fresh basil and a drizzle of hot honey.
