Classic Manicotti vibes minus the guilt. This low carb manicotti is filled with cottage cheese, making it higher in protein and is rolled in a cottage cheese flatbread, making it lower in carbs.

Ingredients

  • 1 Cottage Cheese Flatbread
  • 6 Tbsp cottage cheese
  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 dash Italian seasoning
  • 1 dash dried parsley

Instructions

  • Prepare the cottage cheese flatbread according to the recipe.
    1 Cottage Cheese Flatbread
  • Remove from the oven and cut into thirds, lengthwise.
  • Turn oven temp up to 375 F.
  • Place 2 Tbsp of cottage cheese on the end of each strip followed by a dash of Italian seasoning.
    6 Tbsp cottage cheese, 1 dash Italian seasoning
  • Roll each strip up and place them in a greased baking dish, seam side down.
  • Top with marinara sauce, cheese and parsley.
    1/2 cup marinara sauce, 1/4 cup shredded mozzarella cheese, 1 dash dried parsley
  • Bake for 15-20 minutes.
