Cottage Cheese Flatbread

A simple, flourless flatbread made from cottage cheese and egg that bakes up thin and is flexible enough to use as a wrap or noodles!

Ingredients

  • 1 /2 cup 2% low fat cottage cheese
  • 1 large egg
  • 1 Tbsp parmesan cheese, grated
  • 1/4 tsp garlic powder

Directions:

  1. Preheat oven to 350 degrees.

2. Add all of the ingredients into a blender and blend until smooth.

3. Spread the mixture out into a rectangular shape on a parchment lined baking sheet.

4. Bake for 25-30 minutes or until the edges start to brown slightly.

5. Let it cool for a few minutes before using a spatula to remove it from the paper.

6. Fill, wrap and enjoy!

This flatbread works great for wraps, pizza and even noodles!

Notes

*You can spray the parchment paper with cooking spray if you’d like. I personally do not because I have found that if I just wait a few minutes for it to cool, it comes right off the paper easily.
