Beef Taco & Rice
This meal comes together in under 20 minutes and is absolutely delicious! My kids and husband love it. I normally make this with cooked, shredded chicken but switched things up this time to beef. My family liked it even more!
Ingredients
Method
- In a skillet over medium heat, scramble the beef until cooked through. Drain excess grease if needed.
- Add in the taco seasoning, beef broth, tomato sauce and corn. Bring to a boil.
- Stir in the rice, cover with a lid and turn heat to low.
- Cook for 5 minutes and then fluff with a fork.
- Top with cheese, cover with a lid and cook for another few minutes or until the cheese has melted.
Notes
I serve this meal with a side of tortilla chips. We all like to dip our chips in it. My husband and youngest daughter like to drizzle on some Frank’s Red Hot as well.
