
Chicken Calzone
This chicken calzone is basically pizza's protein packed cousin! Chicken + pepperoni + basil + cheese dipped in pizza sauce. Perfection! Low carb, low calorie – delicious!

Ingredients
- 1/2 lb lean ground chicken
- salt to taste
- pepper to taste
- garlic powder to taste
- 8 slices low fat pepperoni
- 3 slices of fresh mozzarella
- 1 Tbsp fresh basil
- 1 1/2 Tbsp pecorino romano cheese
Instructions
- Preheat oven to 400 F.
- In a bowl, combine the ground chicken and seasonings.
- Spread the chicken out into a thin circle on a piece of greased parchment paper.
- Add the fresh mozzarella, pepperoni and fresh basil to half of the circle.
- Fold the other half over using the paper and press down slightly.
- Unfold the paper and then use a fork to crimp the edges.
- Top with pecorino romano cheese and then place on a pizza stone or baking sheet in the oven.
- Bake for 15-20 minutes or until chicken has reached 165 F. Broil the last few minutes to get a crispy shell.
- Cut in half and dip in pizza sauce.
