Garlic Herb Boursin & Tomato Spaghetti Squash

Tender roasted spaghetti squash tossed in a creamy garlic herb Boursin cheese, juicy garden cherry tomatoes and fresh basil. A simple, flavorful low carb dish that’s comforting and full of fresh summer vibes.

Why Use Boursin Cheese?

Boursin cheese is a soft, creamy French cheese. It’s rich, tangy and melts into the warm spaghetti squash, coating every strand with its garlic-herb flavor. It’s what makes this dish taste so indulgent.

Ingredients

  • 1/2 of a spaghetti squash
  • avocado oil spray
  • salt, pepper & garlic powder to taste
  • 9 cherry tomatoes
  • 3 Tbsp garlic-herb Boursin cheese
  • 2 Tbsp fresh basil, thinly sliced

Directions

Preheat oven to 400 degrees.

Cut the squash in half lengthwise and then scoop out the inside. *Save the other half for another day.

Spritz it with avocado oil spray and season with salt, pepper and garlic powder.

Place it upside down on a parchment lined baking sheet and bake for 25 minutes.

Remove from oven and shred the insides using two forks.

Add the cheese & tomatoes and then bake for another 15 minutes.

Remove from the oven, sprinkle on the fresh basil and then use a fork to carefully mash the tomatoes and mix everything together.

Ingredients
