Honey Mustard Chicken Thighs

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 2 Tbsp dijon mustard
  • 1-2 Tbsps honey
  • the juice of 1/2 of a lemon
  • dash of salt
  • dash of pepper
  • 1 bag of mini potatoes, halved
  • 1 bag of frozen green beans
  • drizzle of extra virgin olive oil

Directions:

  1. Preheat oven to 375. Place the chicken thighs in a greased 9×13 baking dish and season.

2. Add the halved potatoes into the dish as well.

3. Mix the honey, mustard, lemon juice, salt and pepper together in a small bowl,

4. Drizzle the mixture all over the chicken and potatoes.

5. Drizzle on some olive oil and then bake for 25 minutes.

6. Remove from oven, add on the frozen green beans and then bake another 25-30 minutes or until the chicken has reached an internal temperature of 165 and the potatoes are fork tender.

7. Broil for a few minutes if you like the skin of your chicken to be crispy.
