Sesame Peanut Cucumber Salad

Crisp Cucumber meets a creamy, Thai-inspired peanut dressing made with low carb peanut butter. This salad is fresh, bold and satisfyingly low carb!

Our Favorite Salad

Ingredients

  • 1 medium cucumber or 3 mini cucumbers
  • 1 Tbsp natural peanut butter
  • 1/2 Tbsp liquid aminos (or soy sauce)
  • 1/2 Tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp minced garlic
  • 1/2 tsp everything bagel seasoning (or just sesame seeds)
  • dash of red pepper flakes
  • 1 tsp crunchy garlic with chili oil *optional, If you don’t use this, you can subtract 35 calories and 1g carb.

Directions:

  1. Wash and slice the cucumbers thin. Place in container that has a lid.

2. Add in the remaining ingredients.

3. Place the lid on securely and shake until combined.

  • 1/2 Tbsp liquid aminos *or soy sauce
  • 1/2 Tbsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp toasted sesame oil
  • 1 tsp crunchy garlic with chili oil *optional
  • 1/2 tsp everything bagel seasoning
  • dash crushed red pepper flakes

Instructions

  • Wash and slice the cucumbers and then place them in a container that has a lid.
  • Add in the remaining ingredients.
  • Cover with the lid tightly and shake until combined.
