Loaded Zucchini

If you love baked potatoes but are trying to keep it low carb, give this delicioius side dish a try.

Ingredients

  • 1 medium zucchini
  • 1 cup shredded colby jack cheese
  • 4 slices turkey bacon cooked
  • 1 roma tomato chopped
  • 2 green onions sliced
  • 1/2 Tbsp extra virgin olive oil
  • salt, pepper, onion powder and garlic powder to taste

Instructions

  • Preheat oven to 375 F.
  • Cut the zucchini into slices and then cut those slices into fourths.
  • Place the zucchini in a bowl and then add in the olive oil and seasonings. Stir to combine.
  • Place half of the zucchini slices in a greased baking dish followed by half of the chopped tomatoes, half of the cheese and half of the bacon.
  • Repeat those layers and top it off with the diced green onions.
  • Bake for 25-30 minutes.
  • Top with a dallop of sour cream if desired.
