
Loaded Zucchini
If you love baked potatoes but are trying to keep it low carb, give this delicioius side dish a try.

Ingredients
- 1 medium zucchini
- 1 cup shredded colby jack cheese
- 4 slices turkey bacon cooked
- 1 roma tomato chopped
- 2 green onions sliced
- 1/2 Tbsp extra virgin olive oil
- salt, pepper, onion powder and garlic powder to taste
Instructions
- Preheat oven to 375 F.
- Cut the zucchini into slices and then cut those slices into fourths.
- Place the zucchini in a bowl and then add in the olive oil and seasonings. Stir to combine.
- Place half of the zucchini slices in a greased baking dish followed by half of the chopped tomatoes, half of the cheese and half of the bacon.
- Repeat those layers and top it off with the diced green onions.
- Bake for 25-30 minutes.
- Top with a dallop of sour cream if desired.
