Substitutions

  • Instead of using monkfruit sweetener, use powdered sugar *if you aren’t living a keto lifestyle.

Ingredients

  • 1 stick of salted butter
  • 2 cups natural peanut butter
  • 1 1/4 cups powdered monkfruit sweetener
  • 3/4 cup lightly salted peanuts
  • 2 tsp vanilla extract or paste
  • 3 tsp course salt
This is my favorite brand of monkfruit sweetener!

Directions

  • Melt the butter in a microwave safe bowl for 30-60 seconds.
  • Stir in the peanut butter, monkfruit sweetener and vanilla until it is smooth and creamy.
  • Use a small cookie scoop to add the mixture into each cup of a silicone mini muffin pan. *I use 2 pans as this recipe makes 36 bites. *Silicone works best!
  • Top each one with 1/2 Tbsp of peanuts and a pinch of coarse salt.
  • Place in the fridge or freezer to set.
  • Store in an airtight container or Ziplock bag in the freezer.

  • 2 cups natural peanut butter
  • 1 stick salted butter
  • 1 1/4 cups powdered monkfruit sweetener

  • 3 tsp coarse salt
  • 2 tsp vanilla extract or paste
